jollof rice

Tomato-Free Paprika Jollof Rice or Paprika Fried Rice

Do you love rice? I am a rice addict and I am still trying to find a way to lower rice consumption, until then here we go! I am lucky to have kids that can jump start dinner before I get home from work! But sometimes whatever they are cooking is not what my craving is. So last night I got home and kids cooked some white rice already! Thanks to the fabulous rice cooking feature of our instant pot!Well we have white rice and unfortunately were out of fresh tomato, tomato paste or sauce! Mommy was craving a flavorful jollof-rice! I needed to improvise and we sure did! Luckily we have paprika and the idea is to make a Tomato-Free Paprika Jollof Rice or Paprika Fried Rice!

All we need was the following four ingredients: cooked white rice, sunflower oil, garlic, paprika and msg-free bouillon. As a big advocate of clean eating, I only use MSG-free bouillon, and one of my favorite bouillon cube is the Africube. This delicious paprika fried rice  recipe was so quick and easy! Eating is a ritual and styling your meal makes it even more appetizing and the experience unforgettable.  Hopefully you will love this rice dish as my family did.

This beautiful Africa pottery dish brought back from my husband’s last trip to Lome-Togo was the perfect utensil to serve this amazing rice in! Of course the bamboo silverware from amazon are just gorgeous complement. Try this recipe and give me some feedback.
