Lamb Suya or tchintchinga

Lamb suya or tchintchinga has multiple variant.  Check my recipe video here. You can have it on skewer or as barbecue grilled meat. Depend on the day and the energy, my cooking style vary.

Suya originated from Northern Nigeria, and spread all over west Africa and Sudan.. It is said to be a unifying factor in west Africa as similar grilled meat recipes are common in many West African countries.

Like Jonathan Safran Foer said “Food is not rational. Food is culture, habit, and identity. I cannot said that there  is a standard recipe for suya spice (Yahi). Ingredients and recipe vary according per personal and regional preferences Suya seasoning is readily available online or in all specialty store. Their taste may vary slightly but the flavor is always there. Check my etsy shop the Savourous Suya Spice . For this recipe, I would’ve grill it on an actual grill instead of pan grill but the heat outside was unbearable. I grill is mainly for flavor. Also be careful as some suya seasoning can be really spicy. I always have Savourous mild suya spice on hand since my stomach doesn’t agree with hot pepper.

Ingredients

About 2 pounds of thinly sliced lamb meat

1 cup of suya mild seasoning

2 Tablespoons of savourous garlic powder

2 tablespoons of Savourous onion powder

3 Tablespoons of Savourous PrimeRib Seasoning

1/4 cup of cooking oil or some spray oil

Salt to taste

2 Tablespoon of Black pepper

Bouillon (to taste) Optional

Instructions

In a big bowl add the sliced meat

Pour onion, garlic, prime rib seasoning, black pepper, salt, bouillon

Mix until meat is well coated.

Grill to a medium for about 15 making sure both side of meat has the grill marks.

Remove the grilled meat and set in a big bowl

Coat the meat with half of the suya seasoning

Spread the meat on a baking plate

Bake at 375F for about 10 minutes

Remove from the oven, flip the meat

Spray or coat with oil, the meat with remaining suya seasoning

Bake at 375F for about another 15 minutes

Remove, slice garnish and serve warm
