Ancho Chile Rice, Ancho Riz-Gras, Ancho Jollof

Ancho Chile Riz-Gras Jollof is a croud pleaser dish. I cooked this rice inspired by my Lamb Kabsa Dish. Ancho Chile Riz-Gras Jollof. There is not and absolute right or wrong  to cook this togolose riz-gras or nigerian jollof.  It is just a classic rice cooked in an aromatic tomato based liquid. In this recipe I am substituting te tomato based liquid with Ancho chile based liquid.  You can eat the rice as is or with a meat of your choice.

So all you need for this recipe is:

  • Ancho paste
  • Beef Broth
  • Fresh onion
  • Garlic cloves
  • Cinnamon
  • Carrot
  • Hot pepper
  • Rice

Ingredients

2 cups rice (equal part basmati and jasmin)

1⁄4 cup oil

1 medium onion diced

1 cup of diced carrot

3 garlic cloves minced

1⁄2 teaspoon cinnamon powder

4 tablespoons of ancho paste

4 fresh chili pepper

1 tablespoon of bouillon powder

1⁄4 teaspoon curry powder (optional)

1 bay leaf

4 cups beef stock

Instructions

Add oil in a pot, then add the diced onion, diced carrot, minced garlic, cinnamon saute for about 3 minutes.Add the Ancho paste along with optional curry powder and bay leaf.

Add the beef broth, taste the mixture and add bouillon and salt if needed.

Add your clean rice, close the lid and cook until 75% cooked. If rice is still hard add just a little water, Switch the heat to low, Cover with parchment paper and close the lead, it will help the rice absorb all remaining liquid and be nicely soft and fluffy.

Serve with the lamb kabsa.
