Africa Tennis Beignet Togolese Snack

Africa Tennis Beignet is a popular Togolese streets’ snack. Bigger and sturdier than the regular Botokoin or puff puff. The dough consistency is also different. You can find the recipe video for the Africa Tennis Beignets here. You can compare that recipe to the recipe of Botokoin click here.
So, for the Africa tennis, I tried several gluten free flours but couldn’t get the desire outcome, but feel free to experiment. The following recipe is one way of making the delicious beignets. It feels you up so quickly. Beware if you are on a weight loss journey because it is hard to stop at one piece.

I’ve baked some and air fry also, but my grandma was tossing in her grave, the outcome was not that good. I believe in eating the real thing by deep frying it, of course eat if moderately.
For deep frying I use coconut oil, because of its high cooking point but also it was traditionally fried with coconut oil.
I made these for my kids and the majority love them, but my middle child said it is too much dough. But try it and see for yourself as I am sure you will not regret it.

Below is what you need:

6-7 cups flour

3 tbsp butter

1 tsp Nutmeg

1 cup of sugar

1 egg

1 tbsp Vanilla

1 tsp Baking powder

1 tsp Yeast

1 cup milk

1 cup Water

A pinch of Salt

Ingredients

6 cups flour

1/2 cup of melted butter

1 tbsp Nutmeg

1 cup of sugar

1 whole egg

2 tsps Vanilla

2 tsps Baking powder

2 tsps Yeast

1 cup milk

1 cup Water

A pinch of Salt

Instructions

In a large bowl or your mixer bowl, combine  Flour, Nutmeg, Sugar, Baking powder, Salt

Melt the butter, add it to the dry ingredients and start mixing.

In another bowl add the egg and beat it then the rest of the wet ingredients: Milk, water, vanilla. Now add the yeast, mix and let the liquid rest for about 5 minutes.

Add the wet ingredients to the dry ingredients in the mixing bowl

Knead the dough on a flat surface or in a Dough mixer, add flour if the dough is too wet and unmanageable by hand. When done set the dough in a large bowl and cover up to rest and rise for about 50 minutes.

After the rest time take the dough out and cut to size and roll in balls

Then let then cover balls with towel and let it seat for about 30minutes.

Start  frying dough in preheated hot oil at medium low heat.
