Togolese Hush Puppies or Avumi

These Togolese hush puppies or Avumi are just amazing! The recipe video is available here. It was a snack I grew up buying in the street. The name Avumi is derived from how this snack is formed. It has the shape of puppy poop! Avumi in Mina language mean dog poop. Although the name is kind of gross, the snack is fabulous! It’s been over 20 years since I had them. I woke up one this morning trying to reproduce it based on my childhood memories.

 For some reason, Avumi is becoming rare in Togolese street lately. I decided to pin the recipe here for future generation. What you need is some corn kernel with seed coat on. Also some seasoning and a bit of hot pepper!

It was quite a journey and finally I was able to make these and my friends agreed it is just like the original. I am amazed how good the end result was! I did not add any food coloring to my recipe. Usually street vendors will add some red powder to give the paste a more reddish color.  I will suggest adding paprika for that perfect original color. I personally wanted it simple! Forming balls that stick together was easy as the corn paste is a bit sticky. My blendtec made pureeing this corn so easy.  The corn kernel used need to have its seed coat. It can be yellow or white corn.

Ingredients

2 Cups of Whole corn

1/2 medium Onion

3 cloves of Garlic

2 tablespoons of Ginger paste

2 tablespoons of Red hot pepper

Bouillon seasoning

Salt (to taste)

Coconut oil for (deep frying)

Instructions

Soak the corn overnight at room temperature water.

Drain the moist and soften corn and pour it into a blender.

Add onion, ginger, garlic, red hot pepper and blend it finely.You can add drops of water to help with the blending.

Once blended, pour it in the a large bowl then add salt and bouillon, mix it thoroughly.

Divide the corn mixture in half and set one half on a side.

With the first one half of the corn mixture, take about 2 tablespoons.

Add a cup of water to the 2 tablespoons of corn mix and bring to a boil on a stove on medium heat constantly stirring it.

Once boiling add the rest of the first half of the corn mixture mix well with spatula.

Let it cook for 5 minutes and remove from the stove.

Pour the cooked corn mixture onto the remaining half of the raw corn mixture and mix well.

The paste will be a bit hard but continue smashing any clumps that is being formed with a spatula (It is a good arm exercise).

Make sure you obtain a smooth paste. The dough will be cool enough for handling. Form small balls.  You can stick them together if you desire. Here the dough is sticky enough to clump together in a group of three.

Start deep frying on medium heat until balls are well cooked and golden.

Serve with hot sauce or as is.
