Sweet Snacks with Coconut milk and coconut flakes (Atchomon, chin-chin, merveilles)
These sweet snacks are very popular in west Africa, there are multiple variant for it.
I love the texture of coconut flakes in this variant.
3 to 4 cups of all-purpose flour
1 sugar (powder, coconut sugar…)
1 cup coconut milk
2 tablespoons of butter
1cup of sweet coconut flakes
Half teaspoon of salt
½ teaspoon of baking powder
5 tablespoons of nutmeg
Coconut Oil (for deep fry)
Add the wet ingredients and make sure sugar and salt is melted
In a mixing bowl, add wet mixture to dry ingredients and knead until you obtain a consistent dough
Cut pieces of kneeded dough and rolled them into a thickness of about 1inch (2.5 cm)
Cut the rolled dough into pieces of approximately 1inch (2.5 cm)
Deep fry the atchomon in hot coconut oil until golden
Let the atchomon cool on absorbing paper after removing them from the frying pan as these should be eaten at room temperature. Store the rest in an airtight container so they can stay crunchy on the outside .
