Kale stew with shrimps

Healthy and Easy Kale Stew

This healthy and easy kale stew is my favorite rapid meal of weekdays. What I like about this dish is the simplicity and the versatility. Click here for the video recipe.

You can use substitute kale with other greens like spinach, dandelion, collard green and more.

I did not use tomato in the recipe. Normally, I tend to diminish my tomato intake. I got used to the AIP protocol and do not put tomato on my grocery list very often. Since I have the frozen chopped kale in my freezer, that is what i used for this recipe. I made sure to taw the kale squeeze extra liquid out if be putting it in the stew. I use my YEDI pressure cooker to make the recipe with a sautéed setting.. Check it out here

Anyway I used belle pepper for this recipe and the flavor is fabulous.

So for this recipe all you need is:

  • Chopped kale
  • Bell pepper
  • Onion
  • Ginger
  • Garlic
  • Hot pepper
  • Oil
  • Salt and bouillon
  • Optional meat (i used jumbo shrimps)

Kale stew with shrimps

Ingredients

16oz of frozen chopped kale

2 red bell peppers

1 medium onion

2 cloves of garlic

2 tablespoons of ginger puree

1/4 cup of cooking oil

2 habanero peppers

1 tablespoon of bouillon powder

Salt to taste

Shrimps (optional)

Instructions

Thaw your frozen kale, squeeze extra liquid out and set aside

In a food processor, blend coarsely your bell pepper, onion, garlic, ginger, pepper.

In a cooking pan on medium heat, Add oil and bell pepper puree mixture.

Cook for about 20mins until it is thick, then add your shrimp, salt and bouillon

Cook it for 5 mins until shrimp are done cooking and add the chopped kale.

Stir it well.

Cook it for 3 mins, add black pepper powder stir and remove the stew from the stove for serving

Please note to can use more oil if you desire as this recipe cook better with extra well but personally the less oil the better for me.

This stew can be eating as is or with rice, banku, gari, ablo or more
