Grilled Spatchcock Chicken or butterflied chicken with Green Beans

This grilled spatchcock style chicken is a great way to have homemade fancy chicken feast for dinner in no time. Check out the recipe video. By splitting your bird, the cooking surface area increases, this allows the chicken to be evenly cooked in no time.

You do not need to remove the backbone of the chicken. All you need is cut the chicken in half with a kitchen scissors or good knife. Then you will flatten the chicken by breaking the breastbone. The breast meat will not get dry during cooking, the chicken is tender with crispy skin. You can cook this in the air fryer or the oven. In summer I always love using fresh herbs from my garden for seasoning. So, for this recipe all you need is

  • Whole chicken
  • Parsley
  • Cilantro
  • Hot pepper
  • Onion
  • Garlic powder or fresh
  • Black pepper
  • Oil
  • Salt & Bouillon

The sauteed green beans is optional side dish but it you are going with this; all you need is:

  • Cooked green beans or can green beans
  • Oil
  • Cherry tomatoes
  • Granulated garlic
  • Salt & Bouillon

Ingredients

For grilling the chicken

1 whole clean chicken

1 tablespoon black pepper

1 tablespoon of msg-free bouillon

1 teaspoon of salt

1 tablespoon of garlic powder

1/2 bunch of parsley

1/2 bunch of cilantros

1 habanero pepper

1 green bell pepper

1/2 medium onion

2 tablespoons of oil

For the sauteed green beans

1 can or 2 cups of cooked green beans

1 tablespoon of granulated garlic

1 teaspoon of bouillon

1 cup of cherry tomatoes

2 tablespoons of oil

1/2 teaspoon of salt

Instructions

Puree all the cilantro, parsley, onion, green bell pepper, 1 habanero

Add 1/2 tablespoon of salt, 1tablespoon of bouillon, 1 tablespoon of black pepper

Slice you clean chicken in half by cutting along the backbone side.

Flatten the chicken by breaking the breastbone. Generously seasoned the chicken with the herb mixture. Leave about a 1/3 of the green mixture for brushing the chicken during grilling. This is optional but worth it.

Preheat your grill to 375F. Grill the chicken on both side for about 15mins each until done or when the inside temp reads 165 on the breast side. (Brush periodically with the remaining green mixture). Remove and set it aside.

On medium heat, in a pan, Sauteed the tomatoes with a little bit of oil, granulated garlic, bouillon salt. I tend not to remove the vine tomato brunches just for personal fun. Add the cooked green beans. Cook for 3 minutes remove and serve with your chicken.
