Fried Tomato Stew With Beef Skin or Nugbagba.

This Fried Tomato Stew with Beef Skin or Nugbagba is my all time favorite! So easy to make. You can use precooked beef skin or cook your beef skin from scratch!

If you want a soft meat then you will need to cook the clean cow skint to your desire softness before starting the tomato stew.

You can have this sauce with almost everything. It is good with rice, bread, fried potatoes, fried yam, sweet potatoes, couscous. I my native dialect, it called “akpanman nugbagba”, so delicious and very popular in west coast of Africa. I am glad this stew made it to the list of my son’s favorite Togolese Foods!

fried tomato stew with beef skin

Ingredients

2 pounds of beef skin

1 cup of ground fresh tomatoes

1 cup of diced tomatoes

½ cup of cooking oil

½ cup of diced onion

optional boiled eggs

2tbsps of ground ginger

3tbsps of ground garlic

1tbsps of Paprika

3 laurel leaf

1tsp backing soda (to tone down the acidity of the tomatoes)

1tsp of black pepper

Salt to taste

Bouillon seasoning (to taste)

Hot pepper chopped, ground, whole (per taste)

Instructions

In an instant pot or slow cooker

Add a little water to your clean cow skin and cook at poultry  settings with your favorite beef seasoning and your laurel leaves. You do not want to overcook this meat.

On a medium heat, In a deep pot, add cooking oil, diced onions and diced tomatoes.

Add the puree tomatoes. Let it cook for about 10 mins stirring occasionally to avoid burning.

When it is tart, you can add a teaspoon of baking soda, stir and cook for 2 minutes.

Add ground ginger, garlic, ground garlic, Paprika.
Stir and let it cook for about 3mins

Add the meat with just a little meat liquid if the stew is too tick. taste and add  bouillon, salt to taste. Cook for 3 minutes

Add your diced green pepper, black pepper, cook for 2 minutes and remove from stove.

Serve with rice, bread, fried potatoes, plantain…
