Fresh fish tomato soup (Togolese lanmoumou dessi)

This fresh fish tomato soup  is an old recipe tried in my new 360 cookware.

Anyway you can use your favorite fish with this recipe, but I suggest a fish with less tiny bone, and skin on.

My preference for fish are, red snapper, cassava fish, tilapia, cod, walleye, mackerel, whole thick cut salmon.

Fresh fish dish requires hot peppers! My technique in accommodating everyone degree of hot pepper heat sensitivity is to add uncut whole pepper in the soup. Everyone that need extra heat will just pop their hot pepper!

While cooking fish stew gently stir things to avoid having a mashed up fish!

Ingredients

3 pounds of fresh fish clean and cut

1/4 cup of coconut oil

2 cups of freshly grounded tomatoe

Fish seasoning

2 of savourous wild for salmon seasoning blend
2 table spoon of lime juice

Salt and Bouillon to taste

Black pepper

For the Soup

4tbsp Savourous onion powder

3 cups of water or broth

3 tbsps of savourous garlic powder

3 tbsps of Savourous ginger powder

1 Tablespoon of Hot Pepper paste or powder

Dash of black pepper

Salt and bouillon (to taste)

3 pieces of dried laurel leaves

Garnish

1 Bell pepper sliced thinly

one medium onion slice thinly

1 fresh tomato sliced thinly or handful of cherry tomatoes

Instructions

Seasoned your cut and clean fish with(savourous wild for salmon seasoning blend, salt, black pepper, lime juice) and set it aside

In a your pan, heat up the coconut oil on a medium

Add the ground fresh tomatoes, tomato paste, onion, garlic.

Let the tomatoes mixture cook for about 10 mins

Pour the 3 cups of vegetable broth to the tomato mixture

Gently put the fish pieces in the tomato sauce mixture

Add the laurel leave, hot pepper, salt, bouillon, ginger
Let the sauce boil for 10 min
.

Add the garnish (green pepper, onion and tomato slices) cook for 5 more minute

Add black pepper, mix well.
Remove and serve over rice, couscous, cornmeal (akume), ablo, quinoa….
