Fried Sweet Cornmeal Sticks (Gagondoe, Gagondoin, Gratana, Kulikuli..)

Fried Sweet Cornmeal Stick is a popular snack in Togo, Benin, Ghana. It is a snack that is part of my beautiful Togolese Foods heritage. I introduced this to my kids recently and I was nervous that they will not appreciate something so dear to my African foodie’s heart. What a beautiful surprised; they all loved it! My youngest woke me up the next morning asking me about that snack as he couldn’t even say the name “Gagondoe” like I teach him the day before. It is so easy to make, I am sure you will love it. It is a kind of  Togolese Churro!

Ingredients

1 and 1/2 cups of corn flour

3 tbsps of sugar

1 tsp of salt

1 cup of Water

Oil for deep frying

Instructions

Pour the cup of water in a cooking pan, add the sugar, salt then 3 tablespoons of corn flour.

Whisk well until you get an homogenic mixture.

Place mixture on stove under medium heat in a pan.

Bring the mixture to boil while stirring it.

When the mixture start boiling, add the remaining flour a small quantity at a time while constantly stirring the mixture until you obtain a very firm paste.

Let the paste cook for 3mins, then remove from the stove and set it on a working board.

Let the paste cool off  for about 10mins or until the paste temperature is manageable by hand.

Add about a hand full of flour to the paste and knead the dough to obtain a very firm paste (add more flour as needed)

Form small sticks with your dough, then set it a side.

Heat your cooking oil on a stove and start deep frying your sticks until golden.

Serve warm or cold or at room temperature
