Air fry chicken with puree onion and lime sauce

This Air fry chicken with lemony onion sauce is such a comforting meal.Check here for the recipe video. The whole dish is in part inspired by the Senegalese yassa sauce and the Moroccan spice Ras el hanout. Ras el hanout is a spice blend popular in Tunisia, Algeria, and Morocco. It is like Indian Garam Masala of North Africa! 

I love yassa sauce but I hate cooked mushy sliced onions. Also, If you are not a fan of tomato sauce, you will love this sauce over rice, potato, or as meat topping.

You can cook any meat with this. Since I have chicken tight laying in the fridge, I am cooking this with it.

All you need is a few ingredients and an hour later your flavorful dish will be ready.

First of all, marinating the meat overnight is not necessary. A mixture of  lemon juice, garlic, black pepper, ras el hanout and dijon mustard is all you need. Since it is chicken you do not really need to as chicken absorb flavor and get tender quickly.

Ingredients

4 pieces of chicken leg quarters or chicken tight

4 medium Onion

1/4 cup of oil

2 habanero pepper or scotch bonnet

½ cup unpitted green olive

½ black olive

Marinade

½ cup Lime juice

¼ cup of oil

4 Tablespoon of Mustard

1 tablespoon of Savourous Garlic powder

2 Tablespoons of ras el hanout

Pinch of Black pepper

Pinch of Bouillon

Salt to taste

Instructions

Mix ¼ of oil with the lemon juice, ras el hanout, garlic powder, salt, black pepper, mustard, bouillon

Let the chicken marinate for about half hour. You can marinate overnight if you love planning ahead

Next, remove the chicken from the mixture and reserve the marinade.

Air fry the chicken at 350 for 20 minutes on each side. Of course, I use the yedi air fryer.

In a skillet, over medium heat, add the pureed onion to the 1/4 of oil. Cook for about 5 minutes.

Add the lemony chicken marinade. Cook for about 5 min until onion is well cooked

Add hot pepper, black and green olive.
Then add the chicken to the sauce, turn down the heat and let the simmer for 30 minutes while making sure it doesn’t burn. The sauce will be thick to your desired likeness.

Remove and serve as is, over rice, couscous or with naan bread.

    I think I’m the only one on the planet who still does not have an air fryer. It’s such a great way to make a healthier version of fried chicken. This looks so good …almost inspiring to get an air fryer at the soonest!
