Spinach with pumpkin seeds powder and smoked turkey

This spinach with powdered pumpkin seeds and smoke turkey soup is a very healthy and savory soup to indulge.
The recipe is originated from west Africa, and the soup is usually eating with rice or akamu (fermented corn meal).

Ingredients

1 pack of (10-12 oz) frozen chopped spinach thawed and strained

1 can (6oz) of tomato paste

1/3 cup of coconut oil

1 Smoked turkey leg (cut in chunk)

1/3 cup of powdered pumpkin seed (egussi)

1/3 Freshly grinded onion

1/4 Freshly grinded ginger

1/2 cup of water

2 garlic cloves

Pinch of black pepper

Hot chili Peppers (to taste)

Pinch of salt

Pinch of ground pepper

Other seasoning (Optional)

Instructions

In a soup pan, on a medium heat, add oil, tomato paste, onion, garlic

Keep on stirring well until the tomato paste is well cooked

Form a paste with the powdered pumpkin seed (egussi) and water

Add salt, pepper, meat, other seasoning (optional)

Let it cook for about 10mins

Add the spinach, keep stirring until well mixed

Cook for about 10 more minute, add the ground pepper mix well and remove from stove after about 2 min

Serve warm as is or with gari, okamu

    This sounds so delicious. I have never had pumpkin seed powder ..that I know of. Wherd do you buy yours?

    This sounds amazing, that smokiness paired with pumpkin seeds! Yes! What is okamu? Is that like an equivalent to rice?

      It is some type of fermented cornmeal meal. It has multiple names, with slightly varied textures (Ogi, akpan,akume,pap..). It is very popular and diverse side dish throughout Africa.
