Easy Bread Pudding Cake

This easy bread pudding cake is my quick way of using old bread. Click here for the recipe video. I love French bread, but these tend to harden quickly if you do not eat the in couple days. Sometimes I will throw them in my meat ball mixture or in some of my favorite cake recipe. The below pudding is so good and can be done with challah bread, bread butt, Ghana bread.

This recipe can be made low carb by using lowcarb bread. I made it once dairy free  by using a dairy free milk and sweetened condensed coconut milk and it was amazing.  Of course you can make it gluten free or keto friendly also. What you will need for this recipe is

 

  • French baguette or brioche or challah (makes about 8 to 10 cups)
  • Condensed milk
  • Unsalted butter
  • Evaporated milk
  • Vanilla extract
  • Nutmeg
  • Cinnamon
  •  Salt
  • Eggs

 

For topping the sky is the limit. A keto friendly syrup and dairy free ice cream of whipped cream are wonderful ideas.

Ingredients

2 old french baguette or brioche or challah (makes about 8 to 10 cups)

1 can of condensed milk

4 tablespoons unsalted butter

3 cups evaporated milk

3 teaspoons vanilla extract

1 teaspoon of nutmeg

1 teaspoon of cinnamon (Optional)

 Pinch salt

4 eggs, beaten

Instructions

Cut the stale bread into small pieces and pour it in a buttered baking pan then set it aside.

In a bowl, whisk together egg, condensed milk, evaporated milk, salt, melted butter, cinnamon, vanilla, nutmeg.

Pour the mixture over the bread, cover it and let it rest in the fridge for at least 1 hour or overnight.

Remove from the fridge and bake in a preheated oven at 350F for 45mins.

Let it cool of and serve with your favorite topping.
