Coconut Milk-Turmeric and White Beans

You must already know that I love coconut milk and turmeric. I addition to its health benefit, I use coconut milk whenever I need something creamy but healthy, and turmeric is my number companion to fight body inflammation. You can get Savourous Organic turmeric here.

Ingredients

1 cup of cooked bean and drained

½ cup of coconut milk

1 cup of broth

1tbsp of Savourous garlic powder

1/2 tbsp of Savourous turmeric powder

1tsp of savourous ginger

Dash of black pepper

Salt to taste

Sautéed scallop or meat (optional)

Basil or green onion for garnish (optional)

Instructions

In a skillet, Add bean, broth, coconut milk, turmeric,garlic

Let the mixture boil and cook for about 10mins

Add ginger, black pepper and salt to taste

Let it cook for 2 minutes and remove it from the stove.

Serve as is or with some meat of your choice and garnish.

    Oh my gosh, this sounds amazing! I haven’t had beans in a couple of months since I’ve been nursing my new baby, but her pediatrician said in one more month I can eat them again! This will definitely be the first recipe I try!

    Coconut and turmeric are two of my favorites as well. And scallops are one of my favorite seafoods – the only shell fish I like 🙂

    I love the aroma of coconut milk. I always have some on hand. So great to add to lots of different recipes. These beans sound fantastic. Nice colour from the turmeric too.

    There are days when you simply don’t want to go out to shop groceries, but have a look into your fridge and pantry as for what might be used up. Today I searched Google for “white beans coconut milk recipe” specifically, and I found this one. What comes in handy too, especially on a hot summer day, that you just need ground spices, especially ground garlic, ginger and turmeric. I think that I will add some veggies like zucchini, shallots, carrots and celery and serve it over rice. As a seasoned cook I know that it will work out well. In this case I just needed a “sparkling idea” — thank you for this !
