Coconut Milk, Coconut Sugar, Gluten Free, Dairy Free Flan Cake

This Coconut Milk, Coconut Sugar, Gluten Free, Dairy Free Flan Cake, is the perfect recipe for Gluten free and Dairy free Diet.
No Cheese is needed for this cake.

Ingredients

2 cans thick coconut milk (about 14 oz each)

1 cup brown coconut sugar

1/2 cup of Caramel topping (can be made with another 1 cup of coconut sugar also)

6 large eggs

1 teaspoon vanilla extract

1 teaspoon of nutmeg

Instructions

On a stove in a pot, at low heat cook coconut milk, sugar, vanilla, nutmeg until the mixture thickens like a custard (takes about 25 to 30mins).

Let the mixture cool to room temperature and add the eggs whisk well together

Coat the baking pan with caramel toppings

Pour flan mixture into a prepared baking pan

Preheat oven to 350

Place the baking pan in a big roasting pan, and pour warm water inside the roasting pan to about 2.5 inches

Bake for about 1 hour 45 min or until toothpick inserted in a center comes out clean.

Remove cake from oven and let it cool down completely before trying to remove it from the baking pan

Serve
