Jollof-Rice

Jollof Rice or Riz au Gras

A fluffy and tomatoes colored rice. Very tasty and popular in West Africa.
I can eat this every single day, by varying accompaniment

Jollof-Rice

Ingredients

1can of tomato paste (6oz)

¼ cup of coconut oil

3 cups of gluten free mahatma rice

Half medium onion (diced)

1 clove of garlic

Cooking broth (homemade natural) or water

Salt for seasoning

Other seasonings (optional)

Bell peppers (optional for decoration)

1 bay leave (Optional for aroma)

Instructions

In a wok, on a medium heat, cook tomato paste and onion in the coconut oil, stirring until the tomato paste is well cooked. Make sure not to burn the tomato

Sautéed rice and garlic in the tomato mixture, add more oil if necessary. Cook for about 5 more minutes while always stirring.

Remove from the stove and pour the mixture in the instant pot

Use the broth as water and follow the instantpot rice cooking instructions

Add the dry bay leaf to the mixture, salt and seasoned to taste.

Lock the instantpot lid and set it for rice cooking.

When finish cooking open the lid. The top of the rice may look weird, just mix all together for uniform texture.

Pour in a serving platter and decorate
