Fried Banana Bread (Kanklo)

This fried banana bread is a great snack or a breakfast on the go. It is very popular in west Africa. I tweaked the recipe a little bit by using oat flour instead of the original usual corn flour.

Ingredients

3 rip bananas (brown bananas are best)

1 and 1/4 cup of oat flour (I usually ground quick oat in blender)

Coconut Oil for Deep Fry

Salt to taste (optional)

Instructions

In a mixing bowl, mash the bananas
Add the oats flour, salt and mix well

Heat up the oil in a deep fryer.
Scoop the mixture with a tablespoon into the hot oil.
Cook until golden

Remove and serve warm as is or with a hot tea or some hot pepper sauce.

    Stop!! This sounds so easy and so healthy! I will definitely be making this — like, tomorrow! Just curious – can plantains be substituted for bananas?

      Of course. a plantain can be substituted, make sure it is well ripen for easy mash up .
