Easy Dairy-Free Buttermilk Pie

This dairy free buttermilk pie was one successful chef d’oeuvre of my son.  It was mid-March when a stay-at-home order was announced. At first it was like a joke, it became surreal then reality settles in. All non-essential businesses were closed including dine-in restaurants. Although I love cooking for my family, I quickly realized I could not be working full-time from home and be a teacher, lunch lady and a parent. We needed to quickly adjust to our new at-home situation and make it work.

Breakfast is covered like in any normal situation. Kids were expecting me to make a feast everyday like I used to do every weekend. Because situations are different, we decided everyone will make their own lunch, and I will cover dinner like I normally do on weekdays after work. Ingredients

1 (about 8 inch) unbaked dairy free pie crust

4 medium eggs

½ cup coconut oil, softened

1 cup white sugar

1 teaspoon vanilla extract

2 tablespoons all-purpose flour

1 cup coconut yogurt (yogurt is a great substitute for buttermilk)

¼ teaspoon of nutmeg

1 tablespoon lemon juice

Instructions

Preheat oven to 350F degrees

Add sugar, soften coconut oil and flour

Beat the mixture until smooth.

Stir in coconut yogurt, vanilla, lemon juice and nutmeg

Bake your pie for 45 minutes to an hour, or until center is really firm
