atchomon

Sweet Snacks with Coconut milk and coconut flakes (Atchomon, chin-chin, merveilles)

These sweet snacks are very popular in west Africa, there are multiple variant for it.
I love the texture of coconut flakes in this variant.

atchomon

Ingredients

3 to 4 cups of all-purpose flour

1 cup sugar

1 cup coconut milk

2 tablespoons of butter

1 cup of coconut flakes (sweetened or unsweetened)

1/2 teaspoon of salt

1/2 teaspoon of baking powder

5 tablespoons of nutmeg

Coconut Oil (for deep fry)

Instructions

1

Add melted butter, coconut milk, sugar, salt together and make sure sugar and salt are melted.

2

In a mixing bowl, add the wet mixture to dry ingredients (flour, coconut flakes, baking powder, nutmeg).

Knead until you obtain a consistent dough.

3

Cut pieces of kneeded dough and rolled them into a thickness of about 1inch (2.5 cm).

4

Cut the rolled dough into pieces of approximately 1inch (2.5 cm).

5

Deep fry the atchomon in hot coconut oil until golden.

6

Let the atchomon cool on absorbing paper after removing them from the frying pan as these should be eaten at room temperature.
Store the rest in an airtight container so they can stay crunchy on the outside .
