Beans Beignets Recipe (also called Gaou, Gawu, Niebe or Ankara)

These beans beignets are very popular in west African. These recipe I am sharing is my quick and easy way to make them. You will also find this treat in Bresil and Haiti. I decided not to remove the skin of the beans to make it more healthier by leaving the fiber in.

Ingredients

1lb of dry black eyed-peas

1big Onion

1/2 tsp of red pepper powder

Salt (to taste)

Pinch of Black pepper

A pinch of MSG- free bouillon (optional)

Coconut oil for deep fry

Instructions

Soak peas overnight in lots of water.

Drain. Do not attempt to remove the skin, as the whole bean is healthier.

In a food processor, puree to a paste the soaked peas, onion and hot pepper

Transfer the mixture in a mixing bowl add black pepper, bouillon, and salt to taste

Whip the mixture for about 3mn

Heat coconut oil in a deep fryer

With a tablespoon, scoop the batter and drop it into the hot coconut oil

Fry until golden brown

Remove and serve warm

Can be eaten as is or with porridge like your oatmeal porridge, or serve with hot sauce dip

    Fried black eyed peas are delicious. The first time I had them was as a bar snack, and I loved them. Since I’ve had fritters, and they lived up to my lofty expectations. I’m going to give this recipe a shot.
